Rabri Ghevar is a traditional sweet in Rajasthan and is relished during festivals. Ghevar is a disc-shaped dessert and includes rabdi, malai, mawa, and many other dishes. It is made from maida, desi ghee, milk, saffron, cardamom powder, and sugar. Rabri is condensed sweet milk spread on the top layer of Ghevar and it tastes heavenly.

Origin of Ghevar Recipe

Ghevar originated in the state of Rajasthan, India. This dish is popular here for many years and is mostly enjoyed during festivals like Makar Sankranti, Gangaur, Teej, and Raksha Bandhan. The celebration of Teej in Jaipur city of Rajasthan is incomplete without Gavar.

With the beginning of Sawan, the season of festivals begins. It is customary to offer Ghevar sweets at fasts and festivals like Hartalika Teej, Rakhi, Nagpanchami, Mangalagauri, and Kamika Ekadashi. That is why it is said that the festival of Sawan is incomplete without Ghevar. Ghevar is a Rajasthani sweet but it is liked all over the country.

Ghevar Recipe and Ingredients

  • The ingredients required to make delicious Ghevar are flour, ghee, sugar, almonds, pistachios, saffron, cardamom powder, and yellow food color.
  • Water and ghee are mixed in the flour to make the batter. Food coloring is also added and the batter is poured into a cylinder with hot ghee. The process is repeated and a round cake is made called Ghevar.
  • Sweet syrup is made and Ghevar is dipped in it. Soaked saffron is poured over it and garnished with chopped almonds and pistachios is served.
  • Also a special skill is needed to make Ghevar. It should be flat with 8-9 inches in width and 12 inches in height. It is difficult to prepare this dish in simple shortbread and only it is recommended.

Varieties of Ghevars

Guevara's recipe is very popular during the festive season. People like to enjoy this dish in the form of Paneer Ghevar on Rakshabandhan. It is garnished with grated paneer (paneer). Desi Ghee and Mawa Ghevar are usually made during the celebration of the Teej festival.

Nutritional Value of Ghevar

Ghevar is a rich source of calories. The fat content is also high in this sweet Indian dish. People who want to lose weight or are suffering from diabetes should not consume too much of this sweet snack. To reduce the fat content and caloric content, the ghevars can be shallowly fried, use less ghee, and can be made sugar-free.
