So let us know the ingredients required to make Gulkand:

  1. Rose Petals – 250 grams
  2. Sugar or Mishri - 500 grams
  3. PC Cardamom – 1 tsp
  1. Honey – 1 tsp
  2. PC Fennel - 1 tsp
How to make Gulkand:
  1. First of all, wash the rose leaves in a big vessel with water.
  2. After washing them, keep them to dry in the sun for half an hour.
  3. Once the rose leaves have dried thoroughly, put them in a glass vessel along with sugar or sugar candy.
  4. Remember that while adding rose leaves and sugar or sugar candy in a glass vessel, fennel and cardamom powder should also be added in the middle layer.
  5. Now finally, pour honey on the topmost layer and close this glass vessel tightly. (Note: Adding honey does not bind the sugar in it)
  6. Now keep the closed vessel in sunlight for 7 to 8 days.

Delicious Gulkand Recipe

 

1. Gulkand Barfi Material:
  • 1 ltr. Milk (to make khoya)
  • 800gm. Sugar
  • 3 tsp gulkand
  • 50gms. dry fruits shredding
Method:
  • First of all, put milk in a vessel on a low flame of gas, and add sugar to it. Prepare khoya while stirring, i.e. prepare it in the form of mawa.
  • Now until the mawa cools down, wash the Gulkand 3 times with water so that the stickiness should disappear.
  • Now divide the mawa into 3 parts and mix Gulkand well in one part.
  • Now apply butter paper in a square vessel and layer a portion of mawa on it. Lay it down.
  • After this, spread the layer of mawa with Gulkand and return to the third part of mawa. The layer has to be laid.
  • Now put chopped dry fruits on it and keep them overnight and in the morning cut them into barfi shapes.
2. Gulkand Kulfi Material:
  • 1½ liters fresh milk
  • ¼ cup fresh cream
  • 4 tbsp gulkand
  • 2 spoons of rose water
  • ¼ tsp cardamom powder
  • 10-12 pistachio slivers
Method:
  • Take milk in a pan or kadhai and boil it well.
  • Now turn the flame to medium, add fresh cream and mix well. Take it.
  • Cook on flame for about 30 minutes or until the quantity of milk reduces to half. Let it boil while stirring till it is cooked.
  • Now add Gulkand, mix well, and cook on medium flame. Cook for 3 to 4 more minutes.
  • Now add rose water to it and mix well.
  • Now turn off the gas and add cardamom powder and finely chopped pistachios. Enter.
  • Now cool this mixture to bring it to normal temperature and keep it for at least an hour.
  • Now pour this mixture into kulfi molds and freeze for at least 8 hours. Keep aside until they are completely set.
  • Now before serving, insert an ice cream stick in it so that it can be easily removed from the mold. You can keep the kulfi mold in water for 25-30 seconds.
3. Gulkand Dry Fruits Laddu Material:
  • Gulkand - 25 grams
  • Wheat flour - 250 grams
  • Sugar - 250 grams
  • Ghee - 250 grams
  • Almonds - 50 grams
  • Gum - 200 grams
  • Pistachios - 50 grams
  • Cashews - 50 grams
  • Dates - 50 grams
  • Cardamom powder - 1/4 tsp
Method:
  • Take 50 grams of ghee in a non-stick pan and heat it. Add all the dry fruits except dates and fry on low flame till they turn light brown.
  • Now when these dry fruits cool down, grind them coarsely and keep them aside.
  • Heat the remaining ghee in the pan and fry the gum in it and take it out.
  • Now add enough ghee in such a pan and fry the wheat flour while stirring on medium flame till it turns golden. Roast this flour until aroma comes from it.
  • Now when the flour cools down, add sugar and cardamom powder to it and mix well.
  • After this, make a mixture in which roughly chop the dates and mix Gulkand in it.
  • Now mix this flour mixture well and keep it for stuffing.
  • Now take this mixture in a big vessel, add all the dry fruits and all other ingredients and mix it.
  • Now to make laddus, add some hot ghee to it so that the shape of laddus can be made easily.
  • Now take about 30 grams of the mixture and fill the date-gulkand mixture in the middle and make laddus from it.
  • Now grate the gum finely on the laddu and garnish with chopped almonds. Now serve these delicious laddus.
4. Paan Gulkand Shake Material:
  • 2 glasses cold fresh milk
  • 4-5 sweet betel leaves
  • 2-3 basil leaves
  • 1 tsp raw coconut powder
  • 2-3 tsp gulkand
  • 1/2 tsp fennel
  • 2 tsp cream
Method:
  • First of all, take betel leaves and cut off the back stalk.
  • Now put it in the blender and grind other ingredients like gulkand, fennel, raw coconut, and basil leaves etc. by adding 2-3 ice cubes and make a paste.
  • To make Gulkand Shake, take cold milk and cream. (This paste can also be stored and kept).
  • Prepare a shake by mixing this paste in milk and cream and mix it well with the help of a blender.
  • Now fill it in two big glasses and serve.
5. Gulkand Lassi Material:
  • 2 cups fresh curd
  • 1/2 cup water
  • 2 tsp sugar
  • 2 tsp gulkand
  • 2 tsp rose syrup
  • Some chopped dry fruits – pistachios and almonds
Method:
  • First of all, take two cups of thick and fresh curd. Now, put this curd in the mixer jar.
  • Add water and a little rose syrup, sugar, and gulkand to it and mix it well in the mixer.
  • Now take two glass serving glasses and put 2-2 ice cubes in them.
  • Now add lassi to it and garnish with dry fruits and rose syrup.
  • Now, this Gulkand Lassi is ready to drink.
